A vegetarian family meal plan.

A vegetarian family dinner has to work harder than a side of vegetables. It needs enough protein and substance to satisfy adults and growing kids, and enough familiarity that nobody feels they’re missing out. The families who do it well rely on a rotation of hearty, protein-forward dishes built on lentils, beans, chickpeas, eggs, tofu and dairy, with plenty of vegetables and whole grains around them.

This sample week has no meat, poultry or fish. Each dinner centers on a substantial plant protein, and most can be prepared in 40 minutes or less. Flavors draw on cuisines with long vegetarian traditions, including Indian, Middle Eastern, Mexican and East Asian home cooking, so the food feels complete rather than like a meat dish with something missing. Every dish is designed to be kid-friendly, with heat added at the table. If someone in your family has specific nutritional needs, a registered dietitian can help you plan around them.

Making this week your own.

Families going vegetarian often find the first few weeks are the hardest, simply because the habits and recipes are new. Choose two or three dinners your family already enjoys that are naturally vegetarian, such as bean tacos, pasta with tomato sauce or a vegetable curry, and build out from there. Over a month or two, your rotation will grow, and planning will feel routine.

A well-stocked spice cupboard and a few good sauces make an enormous difference to vegetarian cooking, so invest in those early.

Batch-cooking a pot of beans or lentils at the weekend makes vegetarian weeknights faster, since the protein is ready before you start.

Tips that make this week work.

  1. Build every dinner around a plant protein

Choose the bean, lentil, tofu or egg component first, then add vegetables and grains. It keeps vegetarian dinners filling.

  2. Lean on cuisines with vegetarian roots

Indian dals, Middle Eastern chickpea dishes and Mexican bean dishes have centuries of practice making vegetables the main event.

  3. Make crispy textures

Crispy tofu, roasted chickpeas and toasted seeds add satisfying crunch that families often miss in vegetarian meals.

  4. Keep stock and sauces vegetarian

Use vegetable stock, and check labels on cheeses, Worcestershire sauce and some ready-made sauces that may contain animal ingredients.

Questions, answered.

Can kids get enough protein on a vegetarian diet?

Many vegetarian families plan meals that include beans, lentils, tofu, eggs and dairy. If you have concerns about your child’s nutrition, talk to your pediatrician or a registered dietitian.

What are easy vegetarian dinners for picky kids?

Bean burgers, mild curries, pasta bakes, quesadillas and fried rice are familiar formats. Serving sauce on the side and offering a safe food helps.
