A no-oven meal plan for hot weather.
When the kitchen is already hot, the last thing anyone wants is to switch on the oven. Hot-weather dinners work best when they’re cooked fast on the stovetop or grill, or barely cooked at all: grain salads, cold noodle bowls, quick-seared fish and chilled soups. They’re lighter, fresher and keep the house cooler.
This sample week uses no oven at all. Two dinners are cooked on the grill or a grill pan, two on the stovetop in under 20 minutes, and one needs only boiling water for noodles. Dishes are built around seasonal produce, such as tomatoes, cucumbers, corn, zucchini and herbs, which is at its best and least expensive in summer. Grains and legumes are cooked in the cool of the morning or bought ready-cooked. Every dinner is served at room temperature or cold, so it waits happily if people come to the table at different times.

Making this week your own.
Hot-weather dinners are a good time to involve children, since many dishes are assembled rather than cooked. Rice paper rolls, salads and noodle bowls let kids build their own plates. Keep plenty of cold water on the table, and serve dinner a little later in the evening when the heat eases, if your schedule allows it.
Think about drinks and desserts that don’t need the oven too: chilled fruit, yogurt with berries or frozen fruit bars make simple, cooling ends to a summer dinner. Cooking earlier in the day, when it’s cooler, and serving later at room temperature is another simple way to keep the house comfortable. Keep a jug of cold water with lemon or mint in the fridge, too.
Tips that make this week work.
Cook grains in the morning
Boil rice, quinoa or bulgur in the cooler morning hours and refrigerate it for evening salads.
Use the grill or a grill pan
Quick-grilling fish, chicken and vegetables keeps heat outside, or at least brief.
Build no-cook dinners
Canned beans, chickpeas and fish make substantial salads without any heat at all.
Keep food cold and covered
In hot weather, don’t leave food out for more than one hour. Refrigerate leftovers quickly.
Keep a cold pantry
Stock canned chickpeas, beans, tuna and salmon, plus cooked grains, so a no-cook dinner is always possible.
